12 Days of Smoked Meats at Stiles Switch
Pit masters offer smokin' holiday specials

Every December, the pit masters at Stiles Switch BBQ & Brew (6610 N. Lamar) like to celebrate the anniversary of the popular barbecue joint by unleashing their culinary creativity at the smoker. They come up with 12 days of special smoked meat dishes and invite their clientele to chow down.
Though the idea is inspired by the old holiday song, guests aren't likely to find partridges, pears, or French hens, but there will be smoked quail, Cornish game hens, and turducken, not to mention pork chops, steaks, prime rib, and meatloaf. Also be sure to keep an eye on their Facebook page during the next 12 days, because that's where they'll announce the special craft beer pairings to go with the daily dishes.
•Day 1: Tuesday, Dec. 9 - smoked pork loin with cornbread and spicy sausage
•Day 2: Wednesday, Dec. 10 - smoked bone-in rib eye
•Day 3: Thursday, Dec. 11 - bacon-wrapped quail with smoked corn on the cob
•Day 4: Friday, Dec. 12 - smoked bone-in pork chop
•Day 5: Saturday, Dec. 13 - Dunker's smoked chicken and sausage gumbo with cornbread
•Day 6: Sunday, Dec. 14 - smoked turducken
•Day 7: Tuesday, Dec. 16 -smoked prime rib
•Day 8: Wednesday, Dec. 17 - smoked Cornish game hens
•Day 9: Thursday, Dec. 18 - brisket meatloaf with buttermilk mashed potatoes
•Day 10: Friday, Dec. 19 - chicken fried beef rib with tater tot casserole (This is the actual anniversary celebration with live music and a beer pairing with Real Ale Coffee Porter)
•Day 11: Saturday, Dec. 20 - brisket stew with cornbread
•Day 12: Sunday, Dec. 21 - smoked brisket tamales with spicy smoked sausage chili con queso
Also, don't forget to place orders for the signature smoked brisket tamales ($15 per dozen) now through December 16 by stopping in at Stiles Switch or giving them a call.
