Three Quarters of a Baker's Dozen

Three Quarters of a Baker's Dozen

Cookies Unlimited

by Nick Malgieri

HarperCollins, 384 pp.,$35

This hefty collection of 350 American and foreign cookie recipes is New Yorker Malgieri's follow-up to books on perfect pastry and overall baking instruction. The book is divided by types of cookie and each recipe is clearly written with just the kind of thorough explanation one would expect from a cooking teacher of Malgieri's standing. (He developed the baking curriculum at the Peter Kump Cooking School in NYC.) The author's recipes and descriptions always inspire me to head for the kitchen, book in arm, and this new volume is no exception.
