Vaca y Vino in the Texas Hill Country
Argentine-inspired beef & wine event at Bridges Ranch
By Virginia B. Wood, 3:35PM, Thu. Apr. 18, 2013
Lambert's Downtown Barbecue co-owners Chef Larry McGuire and third-generation rancher Will Bridges host an Argentine-style live fire cook-out in the Bridges ranch pasture to benefit the Farm & Ranch Freedom Alliance.

What better place to enjoy beef, wine, craft beer, and hospitality than a wild-flower bedecked ranch pasture in the Texas Hill Country? Vaca y Vino is one of our new favorite outdoor food events, inspired by the live fire cooking of famed Argentine chef Frances Mallman and hosted by accomplished restaurant chefs and one of the most hospitable Texas ranch families you're ever likely to meet.

By the time guests arrive at the Bridges Ranch near Wimberley on Sunday afternoon, chefs Larry McGuire and Lou Lambert will have been up all night, tending fires and keeping an eye on the roasting beef halves that are all part of the vaca entera (whole cow)style of cooking. The beef for the feast will be ready at party time and will be the centerpiece of a menu that includes empanadas, spring soup, grilled greens and warm potato salad, Lambert's house-made sausages, plenty of fiery chimmichurri sauce, and a chocotorta for dessert. In addition to fine wines from Argentina, local craft brews from Pedernales, Live Oak, Austin Beerworks, and Rogness breweries will also be available.

Tickets for Vaca & Vino are $100 (without transportation) and $125 (with transportation from Downtown Austin).
