Now is the time to order pastured turkeys, geese, or ducks for upcoming holiday meals. Pastured birds bring exceptional flavor to the table because they are fattened by grazing in nature and are hormone- and antibiotic-free.

Richardson Farms (2850 CR 412 near Rockdale, 512/446-2306, www.richardsonfarms.com) will sell turkeys for Thanksgiving and Christmas. Double-breasted turkeys cost $4 a pound (dressed weight), and Bourbon Red heritage turkeys cost $8 a pound; dressed turkeys average 10-24 pounds. A $20 deposit now reserves a turkey that can be picked up on Saturday, Nov. 20, at the Richardson stall at the Sustainable Food Center Farmers’ Market in Sunset Valley or the Barton Creek Farmers’ Market.

White Egret Farm (15704 Webberville Rd., 300-3584, www.whiteegretfarm.com) produces turkeys ranging from 10 to 32 pounds, priced at $4 per pound. Look for handy cooking instructions on the website. Fresh turkeys can be picked up at the farm between 1 and 6pm the Monday through Wednesday before Thanksgiving. You can also arrange to have frozen turkeys shipped via UPS. Place orders by phone or online.

Sebastien Bonneu of Countryside Farm (376 Jones near Cedar Creek, 512/363-2310) has ducks, geese, guinea hens, and cuts of wild boar for the holiday table. Place orders via phone or in person at Sebastien’s stall at the Downtown Farmers’ Market and pick them up there as well.
