Marion Gillcrest, La Traviata (314 Congress, 479-8131)

La Traviata chef/owner Marion Gillcrest’s festive holiday dish is Texas quail stuffed with Italian breadcrumbs, pancetta, parmesan cheese, golden raisins, pignolias, and Italian parsley. The hearty little bird is napped with a reduction of Tuscan Sangiovese and served with seared Brussels sprouts. Chef Gillcrest’s cooking has quickly made La Traviata one of downtown’s most sought-after tables. Look for the quail as a special on her current menu.
