Details such as elegant painted china, replacement of the cutlery with every course, and dainty amuse-bouche served between each course give the meals at Aquarelle an air of refinement. The restaurant’s menu bespeaks a studied mastery of French haute cuisine, and unlike many restaurants today, Aquarelle bows low before the canon. Menu highlights include a buttery home-cured gravalax, a Roasted Quail en Croute served with smoked bacon and foie gras in a mushroom duxelles, and the delectable Paris-Brest en Cage de Caramel dessert.
