Looking for a punchy dip to pair with a refreshing rosé? Brooke Hester, co-owner of C.L. Butaud Wines, shares the recipe to a Southern favorite.
“Pimento cheese is often recognized as an iconic Southern food. Served with crackers as a dip or spread on white bread to make a sandwich, it was a staple of my childhood. Served in the school lunchroom, made from scratch or bought prepackaged, I ate quite a bit of it growing up. I enjoy sipping the C.L. Butaud ‘Pa Pa Frenchy’ Rosé alongside this spicy pimento cheese. The wine pairs nicely with each bite with bright balanced acidity and lightens up what can indeed be a slightly heavy dish.”
Spicy Pimento Cheese
Ingredients:
10 oz. cream cheese, softened
¾ cup mayonnaise
1 tbsp garlic powder
1 tbsp onion powder
1 tsp celery seed
1 cup pickled jalapenos, chopped
6 oz. pimentos, drained
5 cups shredded Cheddar (approximately 1 1/4 pounds)
1-2 tbsp Sriracha
Directions:
1. Combine the cream cheese, mayonnaise, garlic powder, onion powder, and celery seed.
2. Stir in the pickled jalapenos, pimentos and grated Cheddar.
3. Add the Sriracha.
4. Chill before serving.
