Austin’s Eastside seems to offer a welcome home to higher-end, imaginative takes on local Texas cuisine through the efforts of Contigo, Chicon, and Jacoby’s. In March, Pitchfork Pretty will be joining their ranks with a location at 2708 E. Cesar Chavez.
Although rumors of its opening first popped up in 2014, when owner Seth Baas purchased the land, it’s only now that Pitchfork Pretty will be opening its doors to offer its own tribute to Texas Hill Country cuisine.
Their website is still only a landing page, but the restaurant’s Instagram hints at open-fire cooking, a fermented vegetable program to rival Odd Duck’s bar-side lineup, and an emphasis on fresh, local ingredients used in dishes like their oft-photographed sweet potato rosette.
The restaurant announced today that Max Snyder, an Austin native returning home after bulking up his résumé with stints on both coasts, will be joining the team as executive chef, alongside general manager Alexander Dubey, most recently of Otoko.
The project, overseen from the ground up by owner Seth Baas, will feature Snyder’s desire to bring simple and healthy Texas fusion cuisine to life inside a contemporary A-frame. The natural-materials structure is a collaboration between Baas and Austin architecture/design firm Greig-Percy Collaborative. Pitchfork Pretty will feature a full bar and will be open for dinner only.
