The newest food truck to pop up at 2505 Webberville, Soul Seoul Sol, reflects Tyrell Higgins’ passion for comfort food that combines cuisines from around the world with his own Southern flavor.

A former Texas Longhorns defensive lineman, Higgins went to culinary school after feeling stagnant as a personal trainer. He says cooking gave him that “instant gratification but also the passion to be a little bit more creative in the kitchen than you can be in the gym.”

He began doing private dinners and meal preps for his clients as well as working in restaurants. One of his clients was Veracruz All Natural founder Reyna Vazquez, who Higgins cites as a mentor: “She talks to me about consistency and about having something that’s memorable.”

As a former military brat, Higgins says he didn’t necessarily have a hometown cuisine to lean on for his new endeavor. Soul Seoul Sol, open in the same food truck park as Veracruz in the Blackshear Prospect Hill neighborhood, reflects his travels to Korea, Thailand, and Mexico with a multicultural spin on traditional soul food.

Breffas Grits

Higgins’ palate is reflected in dishes like his barbacoa cornbread – topped with pickled onions, crema, and sliced avocado – and his “Breffas Grits” and kimchi fried rice, both with pork belly. The mole-smothered grits plate is an especially bold item, but the chef declares,”I actually enjoy the pork in the grits more than I like shrimp and grits, honestly.”

“I try to create dishes that people have never seen before on a menu because chefs wanna be chefs and we want to do the first of something,” Higgins says.

Soul Seoul Sol enjoys steady morning and afternoon traffic thanks to park neighbors Veracruz and Desnudo Coffee, so Higgins hopes to add new items that encourage the evening crowd to come out. He also aims to separate the truck’s breakfast menu from the pack.

“Veracruz has a little bit more of a monopoly on egg-forward dishes for breakfast,” he admits, “so I gotta be a little creative for my breakfast menu – which is fine. I like it. It allows me to have that creativity as a chef to do something different for breakfast.”
