Go through a cafeteria-like line and the meats – brisket, pork, sausage, chicken, or St. Louis-style pork ribs – are chopped or sliced to order for sandwiches, wraps, or sliders.
is a definitive Texas barbecue joint with window service, picnic tables, and a smoking pit out back. Meat is available by the sandwich, the plate, or the pound, and it's still BYOB.
Meats here are smoked over post oak, sold market-style, and priced by the half pound: brisket, chopped beef sandwiches, three kinds of sausage, beef ribs, pork ribs, pork shoulder, chicken, and turkey. The five sides, potato salad, cole slaw, pinto beans, mac and cheese, and corn casserole, are sold by the serving as well by the half-pint, pint, and quart. Finish off the meal with warm peach cobbler topped with Blue Bell ice cream or creamy banana pudding. Oh, and the taps are stocked with local brews.
Milestone 20th anniversary hitting in 2016, Stubb’s filled the void left by the 1999 closing of Liberty Lunch, itself the local replacement for the Armadillo World Headquarters. Taking its name and recipes from legendary Lubbock cook Christopher “Stubb” Stubblefield, who established the first Stubb’s in his hometown in 1968, the dual-level venue and celebrated barbecue joint boasts indoor and outdoor stages, with the latter holding upward of 2,000 souls. Booked by C3 Presents co-founder Charles Attal and unsung ACL Fest talent doyenne Amy Corbin, both stages host names big (Bob Dylan) and bigger (Metallica).
After putting in some years working the pits at the family's renowned Lockhart temple, brothers Mike and Mark Black struck out to make their mark in Austin. The chopped beef sandwich is perfectly satisfying – piled with tender, flavorful meat that was not too fatty and plenty of pickles. Other standouts: The pork ribs impress, as does the lean brisket.
If you're crazy enough to not want the excellent beef or pork ribs, take a chance on the chicken, turkey, or ham.

You'll find plastic tablecloths, a walk-up counter, a TV in the corner, and delectable barbecue. This is some of the moistest, heartiest brisket in town, and the chicken jumps off the bone. The smoked boudin sounds intriguing.
