Curried Vegetable Soup

Ruth Carter, East Side Cafe (2113 Manor, 476-5858)

With an acre of organic garden to fuel her imagination, East Side soup maven Ruth Carter is never at a loss for soup ideas. This colorful offering features the last of the garden's crop of butternut squash plus carrots, onion, celery, zucchini, cauliflower, mushrooms, potatoes, corn, peas, and tomatoes puréed with coconut milk, aromatic herbs, and spices for a healthy, flavor-packed bowl of soup. Carter swears it wards off cold this time of year. The recipe can be found in East Side's popular self-published cookbook, Soup Yourself.
