In honor of the 10th anniversary of The Austin Chronicle Hot Sauce Festival, we've established The Austin Chronicle Hot Sauce Festival Hall of Flame. Reviewing the past winners, it was decided that any individual, restaurant, or commercial bottler who had won three times or more in any category would be designated a member of the Hall of Flame and awarded a plaque. The winners make a very impressive list of hot sauce aficionados, and we wanted the Festival-going public to know a little something about the talented folks who create the winning recipes year after year. Two of the individual winners, chef John Randall and entrepreneur J.P. Hayes, doubled up and won in the restaurant and commercial bottler categories, with The Yellow Rose and Sgt. Pepper's, respectively. Unfortunately, one of the inductees in the restaurant division, Hank's Roadhouse, no longer exists. One of the commercial bottling winners, Cafe Serrano's, is no longer bottling their restaurant salsa, but the popular homegrown chain will get their plaque. We were unable to contact perennial entrant and regular winner Michael Walters of Houston in time to get his profile in the paper, but we've got a plaque for him if and when he shows up to enter this year. Our heartiest congratulations to the Hall of Flame inductees and good luck to all this year's contestants.
