Last Friday night, watching the Kitchen Nightmares segment filmed at Austin's El Greco in late summer was a painful experience: an hour of family members screaming, crying, and swearing at each other in English and Greek felt more like an intervention than a restaurant make-over.

This week’s episode begins with very little fanfare. The chefs saunter into a dead-empty Palm Door, which is downtown near the conference center. “We are not in a kitchen,” says Grayson, whose powers of observation are unparalleled.
Previously on Top Chef: Heather is eliminated. No one is sad. Later, in their Driskill digs, Ed smack-talks Heather because she achieved success twice thanks to his genoise recipe. Sarah is not impressed, introducing a layer of tension between the two. This will be important later.
