Bird Bird Biscuit Opens This Week in Cherrywood

Austin can’t have too many breakfast sandwiches

Austin is already a great town to live if you’re a biscuit lover, and we’re about to gain a new, more portable option with the opening of Bird Bird Biscuit. The new venture from chef Brian Batch and Ryan McElroy, co-owner of beloved Eastside coffeeshop Thunderbird Coffee, is slated to open on June 28.

Batch used to be in the band Alpha Rev, and apparently developed quite the sandwich obsession while on the road. It makes sense: Sandwiches are the perfect band food because they’re cheap, portable, and the perfect accompaniment to a breakfast beer. (It’s basically the ideal breakfast for most of the musicians we know. )

For Bird Bird Biscuit (2701 Manor Rd.), Batch put an emphasis on developing the perfect sandwich biscuit. It must be sturdy enough to hold up to tooth pressure without crumbling into buttery goop, but still retain the flaky richness all biscuit obsessives know and love. Apparently he’s succeeded, and now he’s here to offer you the most perfectly engineered biscuit sandwiches that kitchen tinkering time can produce.

Of course you can order biscuits and gravy, with bacon or chicken sausage on top. What biscuit emporium would dare to break with that tradition? But things get a little wilder when it comes to sandwich fillings. There’s a classic breakfast biscuit, the Bird Bird Bacon, which is a tried and true combo of bacon, fried egg, and cheddar cheese dressed up with chipotle mayo. And there’s also the Lovely Day, with housemade chicken sausage and pecan basil pesto, and the Childhood, a blend of bananas, peanut butter, honey, and chocolate chips that’ll make your jaw ache and your heart happy.

For lunch, get greasy with the Queen Beak – fried chicken on a biscuit topped with more of that chipotle mayo (this time, it’s infused with bacon) and spicy cayenne black pepper honey. There’s even a vegetarian option, the Lush Life, a sort of deconstructed eggplant parm with fried eggplant, mozzarella, garlic tomato jam, and some housemade pickled onions to pep up all that savoriness. A round of biscuits and a couple mugs of Thunderbird standard coffee promises to be the ideal weekend hangover cure, if you can manage to drag yourself out of bed by their early closing time of 4pm.
