Salud de Paloma is a relatively young company but one with big plans and important long term goals. They are a regular participant in the HOPE Farmers' Market at Austin's Plaza Saltillo every Sunday, selling olive oil, sharing recipes using the heart-healthy fat and tips for avoiding diabetes and providing access to other community resources designed to support healthy food choices.

"It takes collaboration among community leaders and committed health and nutrition organizations to combat diabetes - our olive oil company was formed with this in mind<" said Rosa Rios Valdez, co-founder and president of Salud de Paloma in a press release.
