Pork-centric feast returns with a new twist

Y’all might not know it yet, but on November 20, you’re gonna let out a slow daaaannnnnggggg! That’s because 22 chefs will be converging on Star Hill Ranch for Wine & Swine in the Hill Country to compete for $1,500 from Tender Belly and raise funds for Austin Food & Wine Alliance’s culinary grant program.
This year, the annual pork bacchanalia has a New Orleans twist with visiting chef Stephen Stryjewski of Cochon and French Quarter mixologist Chris Hannah of Arnaud’s French 75 joining Texas greats like Bryce Gilmore, Aaron Franklin, and Jason Dady in one of the year’s can’t miss events. The Gulf Coast Playboys will be providing dancing music and if you need some lagniappe, the Geraldine’s team will be serving up the 2016 Official Drink of Austin, Far From the Tree.
Tickets are still available, but are going fast, so all that "forever hold your peace" stuff applies. And if you need some more convincing, check out the menu below.

•Michael Fojtasek of Olamaie, pulled pork with apple slaw and butternut butter
•Stephen Stryjewski of Cochon (New Orleans), pork belly, pickled and grilled cabbage and bacon slaw on a potato roll
•Bryce Gilmore of Odd Duck, slow cooked pig with seasonal garnishes
•John Bates of Noble Sandwich Co., Cajun fried pork tenderloin on a lard biscuit
•Adam Brick and Taylor Hall of Apis Restaurant & Apiary (Spicewood), “nduja" boudin on grilled sourdough and pork shoulder “tasso" remoulade
•Pieter Sypesteyn of The Cookhouse (San Antonio), whole gator and hog sauce piquant
•Andrew Wiseheart of Chicon and Contigo, whole hog gumbo
•David Norman of Easy Tiger, flammekuchen (tarte flambé), Alsatian flatbread with fromage blanc, onions and lardons
•Alma Alcocer-Thomas of El Alma Café, porchetta and salsa verde with habanero bacon cornbread
•Ted Prater of Banger’s Sausage House & Beer Garden, smoked Cajun boudin, red beans, and rice
•Misti Norris of Heritage Table (Dallas), pecan-smoked pork ribs, roux, puffed rice, and pickles
•Lynzy Moran of Baton Creole, alligator cornbread topped with house boudin and a creamy mustard sauce
•Amy Eubanks of Whole Foods Market, liver, rice, and onion sausage with sauerkraut, apples, and mustard
•Jorge Hernandez of The Brewer’s Table, grilled trotter with garden gremolata
•Ben Runkle of Salt & Time Butcher Shop & Salumeria, salt baked ham with hoja santa gremolata and savory beignets
•Azhar Mohammad of The Carillon, pork belly poboy, shrimp, and celeriac remoulade
•Susana Querejazu of Barley Swine, sweet potato Bourbon bread pudding
•Erica Waksmunski of parkside, bananas foster with vanilla cream
•Rebecca Masson of Fluff Bake Bar (Houston), fried king cake ice cream
